Macaroni Tuna Salad

Ingredients

  • 1 packet MITSIDES short pasta (i.e. conchiglie, rigatoni, shrimps, etc)
  • 400 gr. French beans
  • 2 large tins tuna
  • 1 spring onion, finely chopped
  • ½ cup finely chopped parsley
  • ½ cup olive oil
  • ¼ cup lemon juice
  • 2 cloves garlic, crushed
  • 2 teaspoons curry powder
  • Mayonnaise (optional)

Method

  1. Boil macaroni in plenty of salted water. When ready rinse under cold water and strain.
  2. Meanwhile string and boil French beans and when cooked rinse and strain under cold water.
  3. Place pasta and beans in a deep bowl and add tuna fish, onion and parsley.
  4. Beat together olive oil, lemon juice, garlic and curry until they blend well and pour over salad. Toss and serve.
