In a large bowl, combine the flour, cinnamon and baking powder. In another bowl, whisk together the milk, egg, vanilla extract and vegetable oil. Pour the wet ingredients in the bowl with the flour and mix gently until everything has blended together. It’s ok if your mixture is lumpy. Let the batter sit for about 20 minutes.
In a hot frying pan, add 2 tablespoons of batter and shape with the spoon. Let each pancake cook for 1 minute and then flip it over. The colour of your pancakes should be golden brown.
