Chocolate brownies


  • 250g unsalted butter
  • 200g dark chocolate (60% cocoa)
  • 80g (1 ½ cups) cocoa powder
  • 65g (1/2 cup) MITSIDES Plain flour
  • 1 teaspoon baking powder
  • 360g (1 ¾ cups) caster sugar
  • 4 large eggs
  • 50g (1/2 cup) chopped walnuts

  1. Preheat the oven to 180°C/350°F. Line a 25cm square baking tin with greaseproof paper.
  2. Place a bowl over a pan of barely boiling water and then slowly melt the chocolate and butter together. Add the walnuts and mix together. Remove bowl from the heat and stir until smooth. Let it cool for 5-10 minutes.
  3. In a separate bowl mix together the sifted cocoa powder, flour, baking powder and sugar and then add this to the melted chocolate mixture. Stir together well. Beat the eggs and mix in until mixture has silky texture.
  4. Pour the brownie mix in the baking tray and place in the oven for about 25 minutes. Your brownies should be gooey and a little moist on the inside so to check, stick a knife in the middle. If it comes out with thick grease it means the brownies are ready.
